Superstar Bars

(Dairy, Gluten, Wheat, Nut & Egg Free)


What youll need:

  • 3/4 cup pumpkin seeds
  • 3/4 cup sunflower seeds
  • 3/4 cup dried fruit (can change to create new flavours. Try apricot, dried banana)
  • 1 cup tapioca flour (can use spelt, gluten free flour instead if thats what you have and no gluten allergy)
  • 1/2 cup melted coconut oil (you can use butter too – delicious!)
  • 1/3 cup maple or rice malt syrup
  • 2 teaspoons cinnamon

Blend dried fruit in food processor 10 seconds until fine chopped. Then blend all ingredients together in food processor for 30 seconds (or Thermomix Speed 6, 20 seconds)
